EVO in Tequesta - Ask the chef for your favorite dish

In a market of mostly casual restaurants, EVO (short for evolution) stands as one of the few, if not only, upscale eateries in Tequesta. This tiny two-room establishment packs in the locals year round with its robust southern Italian food and good service. Another plus: Executive Chef Erik Pettersen encourages requests for favorite dishes; if it’s not on the menu, just ask.

A salad (about $14) of mixed field greens tossed with seasonal berries, candied walnuts, red onion, cucumber, hearts of palm, Roma tomatoes and topped with imported gorgonzola cheese started dinner on a solidly positive note for three of us.

The entrĂ©es ($26-32) that followed, including a special request for veal with a savory brown sauce over mashed potatoes and peppers, Hog Snapper Francese atop escarole and white beans, and clams and perfectly cooked linguini in white sauce, earned mostly high marks.  The lightly battered Hog Snapper, while wonderfully fresh, came with an over generous pour of clear lemony sauce, hiding the delicate flavor and texture of the fish. .

Seating accommodates about 60, so reservations are strongly encouraged. A small bar seats five where dinner can also be served. Attire is business casual to dressy. I wouldn’t bring children here. EVO is located in a shopping center where parking is abundant and free.
